Rainbow Lettuce Wraps with Peanut Sauce

Lettuce Wraps:
Wrap the following ingredients in lettuce leaves:

  • Carrots, cut into thin strips
  • Cucumbers, cut into thin strips
  • Peppers, cut into thin strips
  • Hummus
  • Spinach leaves
  • Coriander (optional)

Peanut Sauce:
Mix together the following for a moreish condiment:

  • 3/4 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1-2 tsps honey
  • 1 clove garlic

Maple Almond Scones

Mix together:

  • 3 tablespoons coconut oil, melted
  • 1/4 cup milk (dairy free milk)
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla essence
  • 3 tablespoons maple syrup
  • 1 cup Almond flour
  • 1/2 cup rolled oats
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Roll out dough ’til it is 3cm thick. Use a cookie cutter to cut out rounds of dough. Place them on a tray lined with greaseproof paper and bake in the oven at 200 degrees Celsius (190 fan assisted) for 15 minutes or until lightly browned.
